I've been busy so St. Patrick's came and went without my cooking the
corned beef and cabbage. It really doesn't matter which day I cook the
Corned Beef Brisket. I picked up a very nice the cabbage today and plan
to cook them both tomorrow in the crock pot.
Note: the cabbage has some very nice large leaves which I think I will
wash, blanch and freeze for possible stuffed cabbage at a later date. I
don't know if that will work but I'd like to find a way to use them, not
throw them away. Any thoughts about those large leaves?
Anyway, tonight I'm cooking a pan fried cod fillet. The vegetable side
will be sliced summer squash. I haven't decided yet whether I should
coat the squash with some finely ground seasoned cornmeal and pan fry it
in too, or (oh my gosh) steam the squash. Decisions, decisions.
At any rate, I have a couple of delicious meals planned for tonight and
tomorrow.
