Food and flavor-wise, is not always easy to find interesting apples,
but these also are important projects for any number of reasons.

Overall, genetic diversity makes our food supplies safer in case of
disease or climate change (as you mention), both of which we see these
days. As farmlands are lost to changing work and weather patterns and
populations grow, the pressures and dangers of monoculture are
evident.
