Yes! I *bake* a pound of bacon at a time on a slotted broiler pan lined
with foil for easy cleanup, portion it out and freeze it.

I also keep a couple of packages of pre-cooked shelf-stable bacon in the
pantry in case I suddenly find - ooops, I want bacon but there isn't any
in the freezer! A couple of slices zapped in the microwave and it gets
crisp.

Note: Mostly the pre-cooked bacon is part of my "in case of extended
power outage" food stash.
