Both my husband and I have a lot of other good reasons for staying on
low-carb, too. We both lost some weight (60 lbs. for me and 35 lbs. for
him) and we've kept it off for more than five years, but that's the
smallest reason. Both of us had cholesterol and triglyceride levels that
were sky-high -- mine worse than his. Within the first six months of
eating low-carb they had dropped almost to normal, and since then have
slowly gone down to where they are normal. I also had very high blood
pressure, and that's down to normal, too. My husband had an ulcer for
years, and was just about living on Tagamet and Maalox. He hasn't taken
any of either of them since about two weeks after going on low-carb and
hasn't had a stomach pain since. Neither of us have to take any
prescription drugs any more -- which is something almost unheard of for
a pair of 65-year-olds these days.
I appreciate the recipes! (I've already peeked ahead at some of them and
saved them. They look yummy!) I have several friends and relatives who
also follow low-carb, and are always looking for new recipes, so if you
don't mind I'll share them.
