Abruzzese Cuisine
Anyone interested in talking about Abruzzese cooking?
Abruzzo is the land of wonderfull chef. Villa Santa Maria is the
little town where they come from.
here is a tipical recipe from Abruzzo (abruzzo produce the best
saffron in the world)
Ingredients
400gr saffron tagliatelle
400gr of thin peas (fresh or deep-frozen)
1 medium onion
30gr. of butter
Procedure
Cook the fresh peas without bean in hot salt water for only 3-4
minutes. Strain off the peas and cook them for 10 minutes in a
frying-pan with butter and onion cut in thin pieces. Cook the
tagliatelle in hot salt water and when it's ready add the peas and a
little more of butter, to mix very well and to serve hot.
