Exactly how certain are you that it's the lactose? Having the tablets
only work sometimes hints it could be something else you always eat
with the cheese or something other than lactose in the cheese.

I thought I might be lactose intolerant and the tablets sometimes
helped and sometimes didn't. I never got tested to be certain,
though. It turned out it was the wheat that was causing me the
problems. Times I'd eaten enough cheese to cause me indigestion
where with pizza or pasta. So try cheese without anything else
just in case.

Alternately maybe it's the dairy proteins rather than the lactose.
Consider trying cheese mae from sheep (good romano for example)
or goats milk rather than cows milk and if it doesn't give you
the problem then you know it isn't the lactose.
