About the beef....
During the movie shoot, I took a large cross cut chuck and did it low and
slow on the grill after it spent the night with a good rub (ancho, paprika,
cayenne, onion, garlic, cumin, kosher salt, fresh ground pepper). About half
way through I began spritzing it with a mixture of water, tomato juice, and
apple juice. I wrapped it in foil the last hour or so. It was falling apart
tender. I added some salsa and green chiles, and simmered it for 15 minutes.
Wow...it was so flavorful! Just thought you might want to try it sometime
