When I have that much leftover I put it in the freezer for later and
then move on to something else. In a month or so you can pull it out and
enjoy it again.
Meanwhile, have you tried scalloped cauliflower? Pre-cook the
cauliflower, drain well, top with cheese sauce and crushed pork rinds
and bake until bubbly and golden. Ham is really good in that.
