Beef Salad

Amount Measure Ingredient -- Preparation Method
-------- ------------- --------------------------------
1 cup leftover beef --thinly sliced
6 medium potatoes --boiled and sliced
4 tomatoes --peeled and sliced
1 teaspoon salt
1/4 teaspoon pepper
2 tablespoon wine vinegar
4 tablespoon vegetable oil
1/2 teaspoon dried tarragon leaves
1 tablespoon chopped parsley
2 hard-boiled eggs --sliced

In salad bowl, combine beef, potatoes, and tomatoes.

In mixing bowl, combine salt, pepper, vinegar, oil, and tarragon. Mix well.

Pour over salad. Sprinkle with parsley. Decorate with egg slices.
