This is one of those off-the-top-of-your-head recipes that I got out
of a cook book years ago and sort of tweaked over the years.
Pre-heat the oven to 325F.
6- 8 tart apples (I love Winesaps when I can get them, but really any
favorite cooking apple will work) Peeled, cored, and cut into 1/2 inch
slices.
6- 8 slices of bacon, chopped into 1/4 in pieces
1 Shallot or small onion, chopped.
3 tablespoons brown sugar
Fresh nutmeg
Fry the bacon pieces just until crisp. Set aside. Drain the bacon fat
from the pan except for about 2 tablespoons. Sauté the shallot/onion
on medium heat for 2-3 minutes until barely golden. Add the apples
and saute another 2-3 minutes. Turn off heat. Toss in the bacon and
mix together. Put the apples-bacon mix into a casserole dish.
Sprinkle with the sugar and nutmeg. Cover. Bake for 15-20 minutes
until apples are tender.
If you don't like bacon fat. After you cook the bacon, drain off all
the fat, and saute the apples in 2 TBL of butter and continue on with
the basic recipe.
A splash of apple schnapps, or brandy before baking is good too!
