I have insulin resistance. I need to avoid starch and sugar, but I have
an allergy to wheat as well. All wheat protiens. Even spelt has that.

HEB now has a low carb tortilla that is mostly protien based fillers. ;-)
It's actually quite good! Many low carb tortillas taste like cardboard.
