How long are you planning to keep it in the crockpot? I would put it in
there out of the oven, put the lid on, but not start to reheat it until
about 30 minutes before serving, depending on how much I had. Then you
don't risk cooking it too much or having it dry out. Just leave the lid
on it so the steam stays in.
You can microwave it for a minute to bring it back to temperature right
before serving, too.
