It is very easy to cook to sauce in a pot and then sweeten to taste (
remembering that it will be much reduced, therefore sweeter) and put into
shallow pan in a slow oven. Scrape away from the sides frequently and , of
course some in the middle. This avoids the steam bubbles and chances of bad
burns, but works really well.
