if you mean plain as in with no sushi topping, it's not just taste
(which does matter) as much as it is texture & consistency; it needs
to be sticky enough to hold together with gentle pressure, yet still
be light enough so as to complement the texture of the topping. once
you sample properly prepared sushi rice (which is not that often here
in the states) it takes the sushi to a different level. here in LA,
the best rice i've had is made by shige at sushi sushi in beverly
hills.
