Green Beans Almondine meets the low carb rule.
So does cooked Brocolli with Red Bell Pepper strips and pine nuts.
Mushrooms sauteed in butter do well too.
A nice table condiment is pickled cucumber, diakon radish, with or
without onion ...just put thin raw slices of all veggies used in white
vinegar with just enough sugar to season/sweeten the vinegar to taste and
a pinch of salt; and let meld about 1/2 hr in the fridge before using.
(you can cut this with a little water if it seems too strong).
