a kinda xmas rant
Well it is office party time...We're moving around the 25 of january to a
new building, so this Wednesday is a combined xmas lunch and goodbye old
building bash. Some groups move sooner others later. There's numerous
depts. in the building Approx 150 people.
It is all employee driven and funded...Catered with Ukranian food. Cheap
Company didn't even come thru with a cake, a handshake or kiss my
ass..., zip, blank...nada.
The lunch tickets are $11 each and each Dept needs to supply 1 dessert
per every 7-10 people in thier Dept. Well I got picked to do the dessert(
8 people in my Dept.), so my lunch costs me an extra $28 bucks. This
bothers me, but not a lot. Perhaps I shoulda bought a sheet cake. No then
I'd feel guilty.
I made this (doubled the recipe) in 2 foil 9X11 pans using a part oreo
part graham waffer crumb crust...I also added Brazilian Black Cocoa to
the crust (it looked weird all tan and black crumbs so the cocoa made it
look kinda all black).
Yeah I know Cool whip...but I can make it today and on Wednesday it'll
still be reasonably fresh tasting if wrapped tight in the fridge.

Alan's Dreamsicle Delight Pie

1 large tub Cool Whip; least 12 oz.)
1 pkg (8 oz.) fat free cream cheese, softened
1 small box sugar free vanilla pudding
1 small box box sugar-free orange gelatin
1 small can pineapple tidbits (i used crushed)
1 small can mandarin orange slices
1 low-fat graham cracker crust
Cream together the container of cool whip with the fat-free cream cheese.
Blend until smooth. Add vanilla pudding and orange gelatin over mixture
slowly and mix well until very smooth. Gently fold in the
drained pineapple and orange slices, pour into pie shell and refridgerate
several hours (4+) or overnight. I used 1 tub of cool whip for the
filling (the ultra fat free). I garnished from another tub of cool whip
(the low fat). You can substitute different fruits and different jello's
or serve this parfait style. Cocoa in the garnishing coolwhip is a nice
change. Use a chocolate crumb or graham Waffer Crumb pie shell. Awsome
taste.
