Not every place in Philly makes a good cheesesteak (and getting worse every
year) but there are some very good ones around the country now. I like the
ones from Papa Gino's. They come as close as any I've ever had when I lived
in Philly. Good bread is important though, not some of the Wonder Bread
types of rolls that are very popular now.
