Anchos aren't that hot, in my experience. Typically chipotles (dried,
smoked jalpenos) are put up in adobo sauce, not anchos. Anchos are
milder than chipotles by about a factor of 10 -- they are dried, ripe
poblano chiles, and are not especially piquant.

If true anchos are too intense, you might look into another, less
piquant cuisine. If you want a smoked chile flavor in what you cook
without the fire, try smoked sweet paprika. Tienda.com is my source,
but surely there are others.
