Don't use chocolate chips. They have additives to keep their shape. Just get
some good quality (Valrhona, Callebaut, Scharffen-Berger, Schokinaag, etc)
chocolate. You have two choices at that point. Either melt is just enough to
make is liquid without losing temper or temper it yourself. It's really not
as hard as it seems and a quick google search will show hundreds of posts
with instructions for tempering.
