"joy of cooking". preferably the '75 edition. (though my first "learning"
cookbook was the more recent '97 edition, and I have cooked up many a
successful meal from the recipes within) lots of good, basic, meat and
potatoes stuff presented in a mostly no-nonsense format. i have found, that
with the exception of things like whipped cream et. al, soy, rice and nut
milks substitute fairly for the milk called for in recipes. if he fails with
that, there is always "a man, a plan, a can" (or something like that. i
browsed it at the bookstore a while back.) its not "real" cooking, but a
reasonable facsimile.
