Without knowing what other foods will be served and how many guests it's
difficult to say... with other starchy foods available, ie. potato salad,
macaroni salad, and other pasta dishes, even sandwiches, a lot of folks may not
touch the rice... but rice is cheap, so if you follow your Sig line you'll cook
extra, use enough rice to at least balance the quantity of chicken you'll
prepare... you don't mention how much chicken either, or even a hint of what
chicken and rice recipe. Need more info.
