I think all culinary schools capitalize somewhat on the "glamour"
aspect of food service work. In other words, you could probably learn
all you need to know by studying with the Masters...via books (reading
Julia Child's and Jacque Pepin's books-- ALL OF THEM) and by getting a
restaurant job with a really good house....where you could learn
technique properly--rather than paying a lot of money to have
instructors teach you. But if you like a structured environment, and
studying and taking exams, then you may like Cul School. If you think
you will learn about serious food at say, Applebee's...you're not
serious about food. The paths you can take are many to get your
education. To answer your question...I had a great time at CSCA and
they're always available to answer questions and they do have open
houses. For some reason, their website has been down for about a week
