Sounds like the perfect time for a anti-pasta.
served as a buffet, with a crock pot of soup.
Mom need not take the soup.

Set up the table before mass, with the crockpot-o-soup.
Put the cold cuts on plates in the refrige, with the bread.
On return from Mass, setting up the table should take minuets.
