For me personally, I just make a raspberry coulis by straining mashed
raspberries, and sweetening to taste. If you want it thicker, you can either
simmer and reduce like a syrup, or you can use arrowroot or cornstarch to
thicken. If you choose the latter though, I prefer to use about 1/2 the
strained raspberries, thicken and cool, then whisk in the remaining coulis.
This just seems to be more intense, flavor-wise, to me.
