This is very simple but quite good, if you like cilantro.

a large-fist-sized jicama, peeled
a handful cilantro leaves
about one lime's juice

The jicama can be cut into finger-sized chunks, or smaller julienne.
Clean the cilantro and chop roughly, add to the jicama. Squeeze the lime
juice over (you may need more if your lime isn't very juicy) & toss.
