Bring roast to room temperature, (top round works well)season with garlic
salt & coarse ground black pepper, cook in preheated 500 degree oven 7
mins per lb. Let sit in oven 1-1/2 hours without opening the door.
Another recipe that works well with a large roast (6 to 8 lb.) Preheat
oven to 350 anytime after 9:00 a.m. until 1:00 pm salt & pepper the roast.
roast for 1 hour turn off the oven. Do not open oven door. Turn oven back
on at 350 for 1/2 hour before serving. Roast will be rosy rare all the way
through.
