It all depends on which squash. I peel butternut before
cooking, don't peel acorn ever. Just cook acorn squash and
serve. Eat by scooping out the flesh from the shell.
I wouldn't use pumpkin as a vegetable. It's too bland.
Using it for pie, you need to drain it well. I let it sit
in a collandar overnight before I attempt to make a pie with
it.
