Yellow fin tuna sashimi is the best there is! no question.
I have enjoyed this 'fresh caught' and prepared in Central America (Pacific
coast of Costa Rica)
In Canada the regulations require that all sashimi be 'previously frozen' to
eliminate possible parasites.
Mainly to prevent the infection of a marine form of tspeworm associated with
raw salmon.
Locally I have caught and prepared sashimi made with rock cod, Lemon sole
and Halibut
Heaven!.
