I think he was talking about the "green Herring" of lat spring, not
matjes fillets. The green is really raw and served very plain, with
half the tail fin attched to each fillet. I think that serves as a
handle for those that wish to pick it up and slide it down.

I have eaten them wimp style, with a knife and fork, but I am not
Dutch. BTW, I like matjes fillets as well, but they are a totally
different thing.
