Well, you've probably seen this, which a number of people have
raved about. I haven't tried it though--and you might not be
looking for a sweet dish:
French Toasty Eggs
2 oz cream cheese
2 eggs
2 Tbls SF maple syrup
Cinnamon to taste
Soften cream cheese in micro safe bowl, 20-30 sec on high. Add
the eggs, and 1 Tbls of syrup, stirring to mix. This won't mix
completely, you'll have bits of cream cheese remaining. Micro for
about a min, then stir to break up any lumps. Micro until you
have a large puffy pancakelike result; about 1 min. Drizzle with
remaining sf syrup and sprinkle with cinnamon. This is from Dana
Carpender's cookbook and is as posted on one of my lists.
