It is probably important to differentiate with respect to
the intent of the sushi restaurant, something which is the
exclusive purview of the proprietor. Some restaurants are
in the business of providing some Americanize interpretation
of what we think is a traditional Japanese experience, while
others are just in the business of (I'm simplifying here, I
know) providing excellent raw fish and/or raw fish-and-rice,
with more regard to what drives customer satisfaction with
the experience than to any speculative forecast of what
someone might consider "proper".
