A quick search thru Google identifies 162 sites featuring what is
labeled "Dominican Chicken" or in some instances "pollo loco".

One site with a collection of recipes, including Dominican chicken, is:

Suggest googling "dominican chicken" to check out the various recipes
for the one that is closest to what you remember.
