Perhaps something like this? This specific recipe is for grilled
chicken but have a look at the marinade ingredients. You could do
this in a skillet.

Caribbean Grilled Chicken
35mins plus marinating

Serves 4

Ingredients

180ml/6fl.oz. Vegetable Oil
The Juice of 3 Limes
6 Garlic Cloves, chopped
1½ teasp Black Pepper
1 teasp Hot Pepper Sauce
3 teasp freshly chopped Oregano
1 Bay Leaf, crumbled
1½ tbsp Freshly Chopped Coriander
4 Large boneless Chicken Breast

Instructions:
1. Place the oil, lime juice, and seasonings in a bowl and mix well.

2. Place the chicken in a shallow dish and pour the marinade over the
chicken. Mix to coat well then cover and refrigerate for 2 to 3 hours.

3. Preheat the grill to hot and cook the breasts for 12-15 minutes
on each side, basting with the marinade from time to time. Serve hot.
