It could be some kind of infection. I once had a batch of beer that took a
lot of time to start fermenting then the fermentation was so slow. I bottle
the beer without checking the gravity and after a few weeks, the beer was
cloudy and taste hawful. May be you should taste it if you did not. High
temperature could be a problem but when I was using wine kits, the wine had
no problem to clarify with the bentonite even in summer when the temperature
was quite high in a room.
