The sugar just hides the acidity.
Baking soda really reduces the acidity. If you add baking soda to the
mixture it will start fizzling, as long as there is acid in it.
However, be sure not to add too much baking soda. Intake of too much
baking soda will make you produce a lot of 'air' and may cause purging.
