What chemicals? You are getting your head cheese from a hot-dog
manufacturer?

Head cheese is made by simmering a pig's head with herbs, salt , and
pepper until the flesh comes off the skull. If it has chemicals in it
you didn't do it right.

Also if the aspic that results doesn't taste good you found some other
way to do it wrong.
