I can't name a manufacturer, but I've baked plenty of times in the
stainless trays marketed for steam tables or bain maries. The exact
name escapes me, but they come in a standard size and shape to fit
restaurant equipment. They're stainless steel, square or rectangular
like you say, and can be found in any restaurant supply store.
