Sheldon doesn't know what he's talking about with regards to sour salt.
You will notice that the Food Lover's Companion excerpt he posted said
nothing about using citric acid in pickles.
Pickles are made with vinegar, or lactic acid (from fermentation), or
both. HTH :-)
