In a similar situation, I substituted Red River Cereal (flax, rye and
wheat). I presoaked it in some of the recipe's liquid (milk) for about
fifteen minutes, and then proceeded as usual.
I called the result "seed muffins".
Bulgur,couscous, barley pearls or groats would work as well.
