I just happen to know this one: Remolacha.
Here's a Spanish tapa con remolachas:
Remolacha al Anís (Anise-flavored beet salad): Beets are boiled, cooled,
peeled, and cut into slices. A dressing is made from olive oil, red wine
vinegar, chopped onion, and anise seed. The beet slices sit in the dressing
for several hours.
I add goat cheese or feta.
