I love walnuts too.
Dessert is easy- Walnut Brownies, perhaps with ice cream. Be sure to
put whole ones on top of the brownies before baking. Something about
the toasted walnuts and the chocolate...
Carrot cake also often uses walnuts. Put extra on top after frosting.

Here's a salad I posted a while ago:
1 cooked chicken breast, in fairly large (3/4"?) cubes
1 Granny Smith apple, cubed, same size
1 thin slice of onion, minced
2 stalks of celery, chopped
1/2 c craisins
1/4- 1/3 c chopped walnuts
mayonnaise (Hellmans) to bind
I don'tt add salt, pepper because I usually use leftover chicken that
has already been seasoned.
