Beans and eggs?
With eggs in the morning, I will open a can of either pinto or black beans
(Goya if you prefer) and add a teaspoon of some puree of Chipotle (just
grind up a can of Chipotle with Adobe sauce and keep it in your
refrigerator).
If you like the taste of chipotle, you can also have on hand to add to your
eggswhile they are cooking, a butter which has been mixed with a little of
this chipotle puree.
A tortilla is a good choice for bread. You can if you want spread this
butter/puree mixture on your tortilla or put honey on it. A pre-made large
Costco pita cut in half and put in the toaster is great with honey on it too
as a little desert for this breakfast.
