A local restaurant has an interesting variation of Eggs Benedict on their Sunday
breakfast menu. They use Smoked salmon in place of the peameal bacon.
In case you are not familiar with Eggs Benedict, it is English Muffin, a slice
of cooked peameal bacon (or Canadian Bacon or English Bacon), with a poached egg
and some Hollandaise Sauce. In this case, use the smoked salmon (Lox) in place
of the bacon.
