Unsalted butter is used because ghee is used for making a lot of Indian
sweets liek halwa, jalebi's, etc., etc.
As for the posters who are wondering what "Vegetable Ghee" is, yes it is
a mixture of hydrogenated vegetable oils that has a ghee-like texture.
It is popular because it is a much cheaper (at least in India)
alternative to "pure ghee".
