Well when I make mayo (with egg) I use canola oil. Because I dislike
the taste of olive oil mayo. So I imagine you could use whatever you
wanted as long as it was 100% oil and a liquid.

1 egg.
1 to 1.5 cups canola oil.
pinch of both salt and sugar.
1 tbsp of garlic or more (to taste).
1 tbsp of grainy mustard.
juice of 1/2 a lime.

Put everthing in a jar that a wand/stick blender will fit fairly snug
in and starting at the bottom run the blender thru the mixture slowly 3
or 4 times.
