Slice the sweet potatoes (with skins) about 1/4" thick. Steam them till
almost cooked. Dump out the water. Add one thinly sliced onion, a
couple small globs of butter, a couple tablespoons of brown sugar and a
couple cranks of black pepper. Stir till coated and potatoes are
cooked.

I also like to nuke sweet potatoes, then cut in half and score lines
into them. Melt some butter and brown sugar in the microwave, then add
some pecans. Drizzle over the top of potatoes and pop them under the
broiler for a couple of minutes.

Sweet potato french fries with Ranch dressing instead of ketchup. Yum.
