I just LOVE them with a mustard-cream sauce.

My Mother always prepared them with garlic, slat & pepper, then popped them
in the broiler.

The biggest problem is FINDING the darn things. I haven't seen them in the
butcher section for years. This is probably a good thing, as they're a bit
loaded with fat & cholesterol.
