- without egg, it sounds like Country Fries

Add some crispy diced bacon (4-6 slices) to the following
recipe and substitute bacon fat for the butter:

Breakfast Potatoes

* 4 cups potatoes, diced
* 1 cup onions, diced
* 4 tablespoons butter
* paprika to taste
* salt and pepper to taste

Cook diced potatoes in boiling water for about 4 minutes.
Drain and mix with onions. Heat butter in a heavy skillet
and add potatoes and onions. Fry, bringing potatoes up from
bottom of pan with a spatula occasionally for even cooking.
Season to taste with paprika, salt and pepper.
Serves 4.

.... or with egg - a breakfast frittata.

My method would be different and the ingredients would vary
slightly, but you'll get the idea from this.
