LC doesn't lend itself well to casseroles, primarily because the
thickeners you'd use in other dishes aren't present to hold everything
together. I've tried cheese-based casseroles and they just end up oily.

That being said, you really ought to pop over to
alt.support.diet.low-carb and ask about recipes there. In addition to
what that group has to offer, a simple google search will bring up more
LC recipes than you know what to do with. Many are on websites of folks
who have been on the low-carb plan for a while, so they are
tried-and-true favorites.
