Hi Jessica,

I recently tried Jamie Oliver's Honey and Lemon Juice dressing and it was
delicious.
It is: 6 tbsp extra virgin olive oil, 3 tbsp lemon juice, 1 tbsp honey, salt
and pepper to taste.

When I get bored with my usual vinaigrettes, I sometimes substitute the
vinegar or spice with something different -- for example, rice wine vinegar
and grated ginger; or a berry vinegar with walnut oil; etc.
